I went through the exact same dilemma last year when upgrading from my trusty 1080p monitor. Had a GTX 1080 Ti at the time, so 1440p seemed like the sweet spot - enough pixels to feel premium without absolutely murdering my GPU. Dropped the cash on a ASUS TUF VG27AQ and took it for a spin in both gaming and productivity.
First thing I noticed? That 144hz refresh rate *sounds* like a gimmick until you actually see fluid motion in fast-paced titles. The jump from 60hz to 144hz at 1440p felt more noticeable than going from 1080p to 1440p on a 60hz panel. Granted, my GPU couldn't always hit 144fps in newer titles, but even capping at 120fps with G-Sync, the smoothness was unreal compared to my old setup.
Workstation side was no slouch either. Coding with multiple IDEs open, Chrome with 20 tabs, and a VM running at half the display - everything stayed perfectly readable even at 27" size. The 1ms response time meant no ghosting during video editing work either. Only regret? Not going curved, but that's a whole other debate. GPU load definitely went up about 30-40% in demanding games, but still managed 60+ fps on high settings in most titles.
