A thin gel layer might add some "cushion," but in engineering tasks, that just slows down response time, so I usually avoid it. I go for a 900 × 400 mm size—this "rectangle" covers most of my movement zone without forcing constant mouse lifts, and it lets me switch between parts quickly when needed.
A palm rest feels unnecessary to me—from experience, it just restricts fast movements, and over time, you get used to it, losing the natural hand position. A 3 mm thickness is the sweet spot between comfort and stability; anything thinner can roll over table imperfections, while anything thicker makes mouse tracking less predictable.
