I'm leaning more towards RISC-V because it offers serious advantages in terms of price/performance and open licensing. For instance, in my experiments with SiFive's Coreplex series, it ran stably even with very low power consumption.
I generally prefer ARM Cortex-M because it has a more stable ecosystem and there's already a lot of variety, especially for educational purposes. RISC-V is new but its fully open nature could make it interesting in the future. In terms of performance and power consumption, both are solid, but if I'm looking to upgrade immediately, I tend to stick with existing solutions—adopting a new architecture can be challenging.
