I've been controlling my home with a Zigbee/Thread hub system for the past 3-4 years, and I have no complaints about its stability. I get fast responses locally, and operations continue even if Wi-Fi goes down. It's especially satisfying in the evenings when I turn off the living room bulb with a voice command and get an instant response without any slow cloud connection.
I have six devices running in the house, and I only experience an average delay of 1-2 seconds, which isn't too bad.
Wi-Fi plugs are easy to set up, but I had an evening recently where a slow network ruined everything. So even though a hub system consumes a bit more power, reliability comes first for me.
