I totally get your frustration with heart rate measurement errors on wrist sensors, man. In my opinion, the issue usually boils down to how well the sensor is making contact with the skin. Like, my arm is on the thinner side, so when I tighten it more, the readings improve. There's also the infrared light thing, but heart rate sensors basically work by detecting changes in blood flow in the skin through light. If you smooth out your skin with a bit of gel, cream, or those sensor cleaning wipes, it usually helps.
For blood oxygen sensors, they use light too—combining infrared and red light. If it's giving constant errors, either there's hair under the sensor or you've got a tattoo in that spot. I just shift the sensor a little left or right, and it usually fixes it. Also, heart rate algorithms vary by brand—Huawei’s sensor is a bit sensitive, while Garmin’s seems to give more stable readings, in my experience.
