Headphone tech: noise cancelling vs open-back

Just trying to wrap my head around headphone tech—what’s the actual difference between noise cancelling and open-back designs? I know NC blocks outside noise electronically, but how does that affect sound quality long-term? And open-back ones let air through, which supposedly makes sound more natural, but does that mean they leak noise too? Trying to decide which path to take for my first build’s audio setup.
