What’s a CDN and why does it matter?

I keep hearing about CDNs improving performance but don’t get the mechanics behind them. How do they actually work under the hood? And what’s the difference between pulling files from a central server versus a distributed CDN edge node? Any trade-offs in latency vs cost to consider?
